Cake flour: cups to grams
Cake flour is milled finer and bleached, with 7 to 9 % protein, and weighs about 120 g per spooned cup, the same as all-purpose. Because it clumps, it is almost always sifted, which is why old recipes say "1 cup sifted cake flour" and mean a lighter cup than an unsifted one.
1 cup cake flour = 120 g · 1 tbsp = 7.5 g · 100 g = 0.83 cups
Based on 120 g per US cup of cake flour, spooned and levelled. Real-world cups vary by about ±10 % for powders.
How to measure cake flour
Sift, then spoon into the cup and level. A common substitute for 1 cup cake flour is 1 cup all-purpose minus 2 tablespoons plus 2 tablespoons cornstarch, by weight 106 g flour plus 16 g cornstarch.
Weight is the only measure that does not depend on the container or on how the ingredient was filled. The figure of 120 g per US cup comes from the King Arthur Baking ingredient weight chart; other charts differ by a few percent, which is within the spread between two cooks filling the same cup.
