Granulated sugar: cups to grams

Granulated (white) sugar is the most consistent dry ingredient to measure by volume: the crystals do not compress, so a cup weighs 198 to 200 g however you fill it. Caster (superfine) sugar is slightly denser, about 225 g per cup, because the finer grains pack closer.

1 cup granulated sugar = 200 g · 1 tbsp = 12.5 g · 100 g = 0.5 cups

Based on 200 g per US cup of granulated sugar, spooned and levelled. Real-world cups vary by about ±10 % for powders.

How to measure granulated sugar

Scoop or spoon, then level; both give the same weight. For caster sugar use 225 g per cup, for icing sugar see the separate page, it is very different.

Weight is the only measure that does not depend on the container or on how the ingredient was filled. The figure of 200 g per US cup comes from the King Arthur Baking ingredient weight chart; other charts differ by a few percent, which is within the spread between two cooks filling the same cup.
