Table salt: cups to grams

Table salt is dense, 288 g per cup and 18 g per tablespoon, but the important number is the teaspoon: 6 g. Kosher salt is much lighter by volume, about 3 g per teaspoon for Diamond Crystal and 5 g for Morton, so a recipe written for one salt is oversalted or undersalted with another unless converted by weight.

1 cup table salt = 288 g · 1 tbsp = 18 g · 100 g = 0.35 cups

How to measure table salt

Level teaspoons, or a scale for anything over a tablespoon. Table salt 6 g/tsp, Morton kosher 5 g/tsp, Diamond Crystal kosher 3 g/tsp, fine sea salt about 5 g/tsp.

Weight is the only measure that does not depend on the container or on how the ingredient was filled. The figure of 288 g per US cup comes from the King Arthur Baking ingredient weight chart; other charts differ by a few percent, which is within the spread between two cooks filling the same cup.
